Mrs Yoshi Yoshiwara: dietician

When Miss Watanabe, a trainee student, and I knocked on the sliding door of her small office, Mrs Yoshiwara, the dietician of Aoba, was sitting in front of her computer typing the menus for the next day. Every time trainee students come for field training in Aoba, she gives a talk on what a dietician and the dietary department do in a tokuyō home. She decided to do this seven or eight years ago when she read a report of a trainee student who had commented on the leftovers in the home. It was the only report mentioning meals that Mrs Yoshiwara had ever read, because issues of how to transfer patients, feed them, or help them with toilet and bath were the ones that interested the students the most. She thought it necessary to have the students understand the work of the dietary department because, for her, meals were the starting point of care.

Showing us the materials and photos she had prepared for the talk, Mrs Yoshiwara began to describe her duties.

Meals are the most vital factor for the survival of the elderly. However, because of the variety of illnesses, 40 years' difference in age range, and the complicated physical conditions of the residents, it is difficult for us to make meals that can satisfy everybody. In order to make good dishes to satisfy the residents, it is important for us to know their tastes.

In order to grasp the residents' tastes, Mrs Yoshiwara wrote down each individual's favourite food and hislher ingestive functions whenever she attended an interview. For those who could express themselves clearly, she and her colleagues regularly asked what they thought about the meals, usually at their birthday parties. Based on this information and suggestions as well as requirements from the doctors, nurses and the matrons, they prepared a variety of meals. She said:
